Wassail is a hot mulled wine or mulled cider drunk as part of wassailing, an English ritual intended t ensure a good apple harvest the following year.   Wassail began as a spiced wine that resembled Roman recipes that survived the Middle Ages.  It was a libation for the wealthy who could import wine, fruit, sugar, and spices of ginger, cloves, cinnamon, allspice, nutmeg.  When ale and cider replaced the wine, wassail recipes varied according to the means of the each family.

Wassail for Red Wine:  Fill a pot with 1 gallon of red wine.  Add spices to wine.  Stir in 1/2 cup of sugar, and simmer at low heat for 1-2 hours.  Squeeze in the juice of 2 oranges.  Serve hot, or chill and serve over ice.
